First off, I’m not a trained chef, although I considered myself a foodie in the “before times”. In my previous life I enjoyed Italian and French cooking and was generally considered to a good home cook by friends and relatives. I was the kind of person people called when they need help thinking of a nice dinner ideas and how to make them. I will admit that it took me several years to shake off the disappointment of facing a future without the ability to enjoy foods, wines and flavors that I took for granted earlier, but this is the new reality and my focus now it to use the ingredients available in order to not poison myself with salicylates. 

Making the best with what food we have available to us

Having a limited list of ingredients is frustrating to say the least, and I’ve been able to put together a menu of meal options, but I find myself constantly testing the limits and paying the price with the bad choices. Vanilla ice cream impulse decision a few months ago was a painful reminder that it’s probably best to test ingredients that at least are somewhat low salicylate to begin with.

Tracking the outcome with an app

I normally try an ingredient by staying on my safe diet, adding the new ingredient and keep it clean to better document the results in the Bowelle app. Generally the outcome can be revealing immediately and then continue to produce results over the next 2-3 days. If I’m not sure, I’ll try it again several weeks later and compare the results with the prior test.
