Salicylate free meal idea

This pasta dish is a favorite in my weekly meal rotation. The critical part is using good safe parmesan cheese

Recipe

  • Organic Chicken Breast Cutlet – split lengthwise (butterfly and halve the chicken breast)
  • Homemade Pasta
  • Shallots – thinly sliced
  • Butter Unsalted – (Kerrygold unsalted brand)
  • Sea Salt

Steps

Start a pot of salted water for the pasta, and add homemade pasta and cook for 10-12 minutes. Heat a cast iron grill pan over medium-high heat. After the pan is hot enough, add a small pad of butter to the grill and add the chicken breast cutlet with sea salt and shallots. Grill on both sides until crispy and well done. Feel free to finish in a pre-heated (380 degree) oven to make sure it’s done to a healthy temperature.

Remove pasta from water when ready and move to a large bistro sized bowl. Mix in lots or butter, add cut up cooked chicken and shred a ridiculous pile of parmesan on top.
