This is a quick and simple mainstay meal for me. Basic grilled chicken with sea salt along with roasted brussels sprouts.

RECIPE

  • Organic Chicken Breast Cutlet – split lengthwise (butterfly and halve the chicken breast)
  • Brussel Sprouts – trimmed and tough exterior leaves removed
  • Shallots – thinly sliced
  • Butter Unsalted – (Kerrygold unsalted brand)
  • Sea Salt

Steps 
Preheat oven to 380 F degrees. Heat a cast iron grill pan over medium-high heat. After the pan is hot enough, add a small pad of butter to the grill and add the chicken breast cutlet with sprinkle of sea salt. Grill chicken on both sides until crispy and well done. Add more butter in spots on the grill for the brussel sprouts and a pile shallots. Move oven to roast for 15 minutes or when chicken is cooked to a healthy temperature.
