I enjoy cooking a steak every once in a while, but I am rarely able to eat a whole steak, so I’ll use the remainder for a cheesesteak panini-style sammie for lunch the next day. I also need to be careful of the fat content since I had gallbladder removal and I monitor fat intact.
SALICYLATE FREE STEAK RECIPE
- NY Strip Steak – Organic
- Butter Unsalted (Kerrygold Unsalted brand)
- Shallots – thinly sliced
- Sea Salt
STEPS
Allow the steaks to come to room temperature and preheat oven to 350 degrees F.
Heat grill pan (Staub cast iron grill pan) over medium-high setting and season the steak with sea salt. Add a pad of butter to hot pan and add steak quickly to buttered area. Add another small pad of butter and shallot slices to the side. Sear steak untouched for 4 minutes until crispy and grill marked. Flip and sear the other side for another 2 minutes and pile the onions on top so they don’t burn. Move to the oven until the thickest part reads at least 145 degrees F, which will be about 5 to 7 minutes for medium-rare, leave in longer for more well done. When ready, remove from oven and let rest for 10 minutes, then plate and add small amount of Brie or pesto if desired.
Fries Recipe
- Russet white potato (elongated shape works great for fries)
- Canola oil
- Sea salt
Fries Steps
Peel russet potato, cut into thin french fry sizes and soak in mixing bowl of water for 15+ minutes. Remove from water bath and dry off on kitchen towel, pat dry and add back to dry mixing bowl to mix with canola oil and sea salt. Once ready, set the air fryer to fries setting (My air fryer is a Cuisinart and the auto settings are 400 degrees for 20 minutes), keep an eye on it and toss as needed and remove when ready.
